Meat Bones - aka Chicken Wings

Who doesn't love wings? My 3 year old calls them "meat bones" and loves them so much that's also become her nickname around these parts.
I don't use precise measurements in most of my cooking. When I'm balancing a baby in one arm and cooking in the other, I just don't have the capacity to use measuring spoons! But I find you can't really go wrong with the flavors I use. Below are general guidelines but feel free to tweak them to your liking.

The first type of wing I like to make are Ginger Turmeric Meat Bones. (Pictured above - wings on top.) Ginger and turmeric are highly anti-inflammatory foods, which is why I try to incorporate them into my diet as often as possible. Be careful when cooking with turmeric as it stains clothing. I've learned that the hard way.
The second type of wings are Honey Ginger. (Pictured above - wings on the bottom.) The whole honey garlic thing is so overdone. For those of us sensitive to garlic (and I'm learning that there are quite a few of us out there), this is just as good, if not better!
I like to pair the wings with something starchy and something green, like mashed sweet potatoes and roasted brussels srpouts. ENJOY!
Ginger Turmeric Meat Bones
Ingredients
3 lbs Chicken Wings (I use non-medicated)
3 - 4 tbsp. Duck Fat (or solid fat of choice)
1/2 tsp Ground Turmeric
1/2 tsp Ground Ginger
1 tsp Sea Salt
- Preheat oven to 375 degrees.
- Combine Turmeric, Ginger and Sea Salt.
- Melt your Duck Fat.
- Add Duck Fat to your spices and stir.
- Use a brush to coat the chicken wings on both sides.
- Place wings on parchment paper lined baking sheet.
- Bake for 20 minutes, then flip them over
- Bake for an additional 25 minutes or until an internal temperature of 165 degrees is reached
Honey Ginger Meat Bones
3 lbs Chicken Wings (I use non-medicated)
1/4 cup local honey
1/2 tsp Ground Ginger
1.5 tsp Sea Salt
- Preheat oven to 375 degrees.
- Place unseasoned wings on parchment paper lined baking sheet.
- Bake for 20 minutes, then flip wings over
- Bake for an additional 15 minutes, or until almost done.
- Meanwhile, combine Honey, Ginger and Sea Salt. (If your honey is solid, you may need to heat it a little so it's easier to work with.)
- Pull wings out of the oven (after they've cooked about 35 mins.) and use a brush to coat the chicken wings with honey mixture on both sides.
- Place wings back in the oven for another 5 mins, flip them and cook for another 5 mins or so, until they have have browned to your liking and reach an internal temperature of 165 degrees.
