I'm going to lose it. It's been about a week since I've had taro and I just can't take it anymore. This vegetable I'd never even heard of this time last year, I now crave like crazy. The farm market I went to doesn't carry it and my supermarket is out. Ahhh. I can't wait to share my giant taro tater tots recipe with you. But I have to get my hands on one first. *sigh*
On a happier note, summer has officially arrived! That means it's BBQ season, here in Vancouver. My hubby is the best when it comes to grilling, but he was out when I made this for lunch. This lamb shoulder chop was only $4.99/lb so I stocked up. My chops were all between $2 - $4.50 a piece! Normally, I braise my chops, but today it was perfect grilling weather!
Grilled Lamb Chops
Ingredients
1 Lamb Chop
2 tsp. - Avocado Oil
1/8 tsp - Herbs de Provence / Sea Salt Blend
Instructions
- Preheat your BBQ on high
- Brush your lamb chop with avocado oil
- Sprinkle on your herbs de provence / sea salt blend
- Sear your chop for 1 - 2 minutes per side
- Turn heat to medium/low for another 6 - 8 minutes, flipping once, until desired doneness is reached
(Note: Cooking time is entirely dependant on your grill and how thick your chops are. Be sure to reach an internal temperature of 145 degrees for medium-rare)
I enjoyed mine with a side of roasted rainbow carrots and steamed broccoli.
Anyone have trouble sleeping lately? Earlier in the week, I kept getting a second wind of energy at night and wasn't getting to bed until 11:30pm plus my sleep was lighter and less restful than usual. Not good, since I'm still up at least every 3 hours nursing my baby and with the other kids for potty breaks and bad dreams. Why can't they want daddy's comfort in the middle of the night?? I know I needed to break this bad habit as sleep is sooo important on a healing diet.
Then it dawned on me. I've forgotten all about my magnesium oil spray! It works WONDERS for me. I started using it when I was getting leg cramps at night which became worse during pregnancy. A few sprays of Ancient Minerals Magnesium Oil Spray on each calf before bed and I wouldn't get a single cramp plus I'd sleep very deeply. (And, no, they are not paying me to say this! ...although I wish they would...)

I started the mag. oil spray routine at bed again two nights ago, and, without fail, I'm sleeping soundly again. Thank goodness!
