A Simple Beef Stew

Yes, I realize we've just entered summer and most people don't equate stews with summertime. But, to me, summer is a perfect time to enjoy stew! I like it because I can prepare it pretty quickly in the morning and throw it in the slow cooker (which doesn't heat up the whole house like the oven does). This frees up my day to enjoy the sun and my active children. And when all that running around leaves me extra hungry, I can come inside to a hearty meal.
My beef stew is super easy and tasty.
Simple Beef Stew
Ingredients
2 lbs. Beef Stew Meat
2 Tbsp. Duck Fat (or high-heat cooking fat of choice)
2 Medium Yams (500g), cut in 1 inch chunks
5 Carrots, cut in 3 inch pieces
1 Onion, roughly chopped
5 Fresh Sage Leaves
2 Fresh Sprigs of Rosemary
2 Fresh Sprigs of Thyme
2 tsp. salt
4 cups water (or broth - if using broth, reduce your salt)
3 - 5 cups organic greens of choice (I used baby spring mix)
Directions
- Place your chopped carrots and yams into your slow cooker.
- Using a dutch oven or heavy-bottomed pot/pan, melt the duck fat over medium-high heat.
- Brown the stew meat in small batches.
- Transfer browned meat to the slow cooker.
- Add onion to the dutch oven, stirring often and lowering the heat so it doesn't burn. (Add in some extra fat if it starts to stick.)
- When the onion starts to turn translucent, add in the sage, rosemary and thyme, cooking for another 2 - 3 minutes.
- Transfer onion/herbs to the slow cooker.
- Sprinkle with salt.
- Pour the water (or broth) over the meat/veg.
- Cook on low for 8 hours.
- Option: If you want to sneak some super healthy greens in there, add a few cups of organic spinach or baby greens to the slow cooker 15 minutes before your stew is finished.
I love this for dinner but I love the leftovers for breakfast even more! I can't think of a better way to start my day than with a big bowl o' yummy stew.
